KOHLRABI

Can you honestly say that you have tried Kohlrabi ten times?  It can take up to 10-12 tries before your taste buds allow you to like a food.  As I like to say, try something 10 different ways, not just 10 different times!

Kohlrabi is a proud member of the cancer fighting cabbage family.  It has the same amount of vitamin C as an orange.  It is a good vegetable to try to get to know better. When cooking with children I like to call this the Alien Cabbage! Kids love the funky look and name, and it kickstarts their imagination into loving this vegetable!

When preparing, separate the leaves from the bulb (the leaves are also edible).  Peel the outer fibrous layer with a sharp knife.  Cut into quarters and remove the inner core.


BAKED KOHLRABI

Preheat oven to 450 degrees.  Slice the prepared Kohlrabi into ¼” slices and toss with approximately 1-2 tbl olive oil and a sprinkle of salt and pepper.  Roast in oven for about 15 minutes or until tender and a little brown.   Sprinkle with 1/2 cup grated Parmesan cheese, or Nutritional Yeast for a vegetarian option,  and put back in the oven for another 5 minutes to let the cheese melt.


KOHLRABI SPRING ROLLS

You can also try it cold…in a spring roll. The wrappers are easy to find at any grocery store.  I found some at Market Basket after I paid twice as much at a specialty store!  You can experiment and use really anything in these wraps.  I sometimes use cooked brown rice, chopped peanuts and shredded lettuce or cabbage.  You can also add cooked shrimp, pork, chicken or tofu.  It is fun to get the kids involved by having them create their own signature spring rolls.

Ingredients:

  •  ½ cup grated or thinly sliced raw Kohlrabi
  • ½ cup grated or thinly sliced raw carrots
  • Handful of cilantro and mint
  • ¼ cup rice noodles
  • 4 Spring roll wrappers
  • Dipping sauce

Cook the rice noodles according to package instructions, drain and chop.

Mix the kohlrabi with the carrot.  Add the noodles and then add in a handful of mint and cilantro. Mix together.

Prepare the wrappers according to the package directions.

Fill the wrapper with ¼ cup of the vegetable noodle mix.

Enjoy with your favorite dipping sauce.
