This recipe for a “an ideal lunch salad,” did not initially inspire me with its name. However, it IS actually an ideal lunch salad: delicious and quick to put together. Plus, it’s something different than steaming or stir-frying that head of broccoli. While the recipe calls specifically for white miso, which has a more delicate flavor, feel free to substitute with another variety if that is what you happen to have in the fridge (even if it’s super-earthy Korean doenjang); it’ll work just fine.
