One favorite recipe, that I always turn to when I come across fresh fennel, is this one for a French chicken stew with fennel and saffron. It is perfect with some good crusty bread for dipping. While the recipe calls for 4 fennel bulbs plus the addition of a licorice-flavored aperitif, the recipe works very well with a single fennel bulb and no extra licorice boost. What the bit of fennel does is add a mysterious slight sweetness to the stew. If you are especially fond of licorice, go ahead and add it in full force.
