I love delicata squash: not only because it is the lazy cook’s squash–no peeling required–but also because it is delicious and so easy to cook (which I suppose also goes under the lazy cook category). Also incorporating kale and potatoes in supporting roles, this roasted delicata squash recipe makes a quick and delicious meal.

The recipe calls specifically for white miso paste, but you can use whatever miso paste you can find at the store or hiding in the back of the fridge.

Harissa paste, a spicy African chili paste made with herbs and spices, can be found in specialty food stores (such as Whole Foods, and sometimes Trader Joe’s). Or, if you are feeling adventurous, you can make your own. There are many variations out there, but here is a good one. Don’t worry about having extra, since you can put this on anything to perk it up: eggs, potatoes, pasta, sautéed vegetables… you name it. It also make s a great sandwich spread with cold cuts and sliced fresh vegetables, or thinly spread inside a grilled cheese sandwich (you could also throw some sautéed kale in there, while you’re at it).
