There’s something about sweet potatoes and black beans that gets me every time. So, when I came across this recipe for smashed sweet potato tacos. I couldn’t resist. I like to use the corn & wheat blend tortillas, but go with your own preference. This is a simple recipe, but to make it even simpler, substitute your favorite salsa for the quick pickled onions and chilies; although they are worth the extra effort, if you’re up for it. You can also mix in regular milk (or yogurt or sour cream) with the sweet potatoes, or even leave it out altogether, if you don’t have any nut milk on hand.
